Vegan Egg Substitutes

Hello Sprossians!

We get a lot of questions about what to use in place of eggs in a vegan diet, especially when it comes to sweets! Some people can’t imagine not being able to eat cakes, brownies, muffins, pancakes, you name it. However, it is a lot easier than most people think!
Since our last blog talked a lot about the egg industry and eggs in general, we thought now would be a great time to talk about great egg replacements! If you haven’t seen our last blog yet, you can check that out here.

So let’s get right into it:

Yes, you read it right! Tofu is a GREAT replacement for eggs in terms of cooking needs. If you love scrambled eggs, you can make a great “egg scramble” with lots of yummy veggies and crumbled tofu. Tofu is also great for baking if you use a silken tofu that can be blended easily.

This is a super simple egg replacement for all your baked good needs. You can use this in any recipe that calls for an egg. Note: It is better to buy them whole and grind them yourself right before use.
1 Tablespoon ground flaxseeds
3 Tablespoons lukewarm water
Mix them together and let sit for about 10 minutes until it’s kind of slimy.
One mixture of this = 1 egg

Chia Seeds
This works the same way as a flaxseed egg. The ratios are also the same. It’s just another option while sometimes it’s easier to find chia seeds at your local store. Note: It is better to buy them whole and grind them right before use.

Bananas are a great substitute for eggs, which is why it’s so easy to make Vegan Banana Bread! 1 mashed banana is equivalent to one egg.
Just remember, since it has such a distinct flavor, whatever you make will taste like banana. So this is best used for cakes, banana bread, or pancakes.

Applesauce is great for adding some moisture to your baked goods, but is also another surprising egg substitute. 1 egg is about 1/4 cup or about 60g of applesauce.
If you want your baked goods to be a little lighter, you can also add a teaspoon extra of baking powder to your recipe.

Instant Mashed Potatoes
These are easy to find almost anywhere in the world. Potatoes are starchy carbohydrates, which makes them great for binding! Use 2 Tablespoons for 1 egg.
